Today, I’m excited to share with you a unique and refreshing recipe that perfectly captures the essence of summer. I created this Spicy Strawberry Gazpacho to add a twist to the classic cold soup, blending sweet strawberries with spicy jalapenos for a burst of flavors that will surprise your taste buds.

Ingredients:

  • 500g strawberries, hulled and chopped
  • 1 large cucumber, peeled and diced
  • 1 small red onion, finely chopped
  • 1-2 jalapenos, seeds removed and finely chopped
  • 750ml tomato juice
  • Juice of 2 limes
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

  • ladle

To start, place the strawberries, cucumber, red onion, jalapenos, and tomato juice in a blender. Blend until smooth and pour into a mixing bowl. Add the lime juice, cilantro, salt, and pepper, and stir well to combine. Adjust the seasoning to taste.

Chill the gazpacho in the refrigerator for at least 1 hour to allow the flavors to meld together. When ready to serve, ladle the gazpacho into bowls and garnish with additional chopped cilantro, if desired.

This Spicy Strawberry Gazpacho is a perfect dish for a hot summer day, with its sweet and spicy flavors dancing on your palate.
