I’m excited to share a unique and flavorful recipe that combines two of my favorite cuisines—Mexican and Indian. These Coconut Curry Tacos are a delicious fusion of spices, textures, and aromas that will definitely impress your taste buds.

For this recipe, you’ll need the following ingredients:

  • medium tofu (200g, cubed)
  • coconut milk (400ml)
  • curry powder (1 tbsp)
  • cumin (1 tsp)
  • coriander (1 tsp)
  • garlic powder (1 tsp)
  • onion (1, diced)
  • red bell pepper (1, sliced)
  • corn tortillas (8)
  • fresh cilantro (to garnish)

To prepare this dish, you’ll need the following kitchen tools:

  • skillet
  • wooden spoon
  • knife
  • cutting board

Start by heating a skillet over medium heat. Add the diced onion and sliced red bell pepper, sautéing until softened. Next, add the cubed tofu and cook until golden brown.

In a separate bowl, mix together the coconut milk, curry powder, cumin, coriander, and garlic powder. Pour this mixture over the tofu and vegetables in the skillet. Allow the curry to simmer and thicken for about 10 minutes, stirring occasionally.

While the curry simmers, warm the corn tortillas in a separate skillet or microwave. Spoon the coconut curry mixture into each tortilla, garnishing with fresh cilantro.

Once assembled, these Coconut Curry Tacos are ready to be enjoyed! Each serving weighs approximately 200 grams, and this recipe makes 4 servings. One serving of these delicious tacos is approximately 300 calories.

A unique tip for this recipe is to add a squeeze of fresh lime juice over the tacos before serving. The citrusy acidity will brighten up the flavors and add an extra layer of freshness to the dish.
