Today’s Creation: Spiced Berry Galette

Hello, fellow foodies! Today, I’m excited to share a recipe that’s perfect for a cozy evening at home. I was inspired by the fresh berries at my local farmer’s market and decided to create a unique dessert that combines their sweetness with a hint of warm spices. This spiced berry galette is a beautiful and delicious treat that’s sure to impress your taste buds.

Ingredients:

  • 350g mixed berries
  • 50g white sugar
  • 15g cornstarch
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 50g unsalted butter, cold and cubed
  • 150g all-purpose flour
  • 1/2 tsp salt
  • 50ml cold water
  • 1 egg, beaten (for egg wash)

Kitchen Tools:

Preparation:

In a mixing bowl, combine the mixed berries, white sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Toss gently to coat the berries evenly and set aside. In another bowl, mix the flour and salt. Add the cold, cubed butter and use your fingertips to rub the butter into the flour until it resembles coarse crumbs. Gradually add the cold water and mix until the dough comes together. Shape the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.

Preheat the oven to 200°C. Roll out the chilled dough on a lightly floured surface into a circle about 30cm in diameter. Transfer the dough to a parchment-lined baking sheet. Spoon the berry mixture onto the center of the dough, leaving a 5cm border. Fold the edges of the dough over the berries, pleating as needed.

Brush the dough with the beaten egg wash. Bake the galette for 35-40 minutes, or until the crust is golden brown and the berries are bubbling. Allow the galette to cool slightly before serving.

Tips:

For an extra special touch, sprinkle some demerara sugar on the crust before baking. This will add a delightful crunch and caramelized sweetness to your galette.

Serving:

Once cooled, slice the spiced berry galette into wedges and serve with a dollop of whipped cream or a scoop of vanilla ice cream. This dessert is best enjoyed warm, with the sweet berries and buttery crust melting in your mouth.

The approximate total weight of the cooked dish is 600g, with 6 servings at around 100g per serving. Each serving is approximately 250 calories.
