Today’s Recipe: Spiced Pumpkin and Sausage Stuffed Bell Peppers

Hey there, foodies! Today I’m excited to share a unique and flavorful recipe that’s perfect for the fall season. I was inspired to create this dish by the chilly weather outside and the abundance of pumpkins in my local farmer’s market. These Spiced Pumpkin and Sausage Stuffed Bell Peppers are a hearty and comforting meal that will warm you up from the inside out.

Ingredients:

  • 4 medium bell peppers
  • 200g Italian sausage
  • 250g pumpkin puree
  • 100g quinoa
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Place the peppers cut side up in a baking dish.

In a large skillet, heat some olive oil over medium heat. Add the diced onion and garlic, cooking until softened. Remove the casing from the Italian sausage and add it to the skillet, breaking it up with a spoon as it cooks.

Once the sausage is browned, add the cumin, paprika, salt, and pepper to the skillet. Stir in the pumpkin puree and cooked quinoa, mixing everything together until well combined.

Spoon the sausage and pumpkin mixture into each bell pepper until they are full. Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes, until the peppers are tender.

Once cooked, remove the foil and bake for an additional 10 minutes to brown the tops of the peppers.

Serve hot and enjoy the delicious combination of spicy sausage, sweet pumpkin, and tender bell peppers.
