Introducing: Spicy Chickpea Stuffed Bell Peppers

Greetings, foodies! Today I’m excited to share my latest culinary creation: Spicy Chickpea Stuffed Bell Peppers. This dish was inspired by my craving for a bold and flavorful vegetarian meal that’s both satisfying and nutritious. The combination of spicy chickpeas and sweet bell peppers creates a harmonious balance of flavors that will surely delight your taste buds.

Ingredients:

  • 4 bell peppers (assorted colors)
  • 1 can (400g) canned chickpeas, drained and rinsed
  • 1 cup (185g) cooked quinoa
  • 1/2 cup (120g) diced tomatoes
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • chef’s knife
  • cutting board
  • spatula

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers on a baking sheet lined with parchment paper and set aside.

In a mixing bowl, combine the chickpeas, cooked quinoa, diced tomatoes, red onion, garlic, ground cumin, smoked paprika, chili powder, salt, pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

Stuff each bell pepper with the chickpea mixture, pressing down gently to pack it in. Place the stuffed bell peppers on the baking sheet and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

Once the stuffed bell peppers are cooked, remove them from the oven and garnish with fresh chopped cilantro. Serve hot and enjoy the delicious combination of flavors and textures in every bite.

This recipe yields 4 servings, with each serving weighing approximately 250g. Each serving is estimated to be around 300 calories.

Pro Tip: For an extra layer of flavor, try adding a sprinkle of crumbled feta cheese on top of the stuffed bell peppers before serving. The creamy and tangy cheese perfectly complements the spicy chickpeas and sweet peppers.

I hope you give this recipe a try and make it your own by experimenting with different herbs and spices. Enjoy this flavorful and healthy dish with your loved ones for a delightful meal!
