Deliciously Spicy Chickpea Stuffed Bell Peppers

Greetings, lovely readers! Today, I am excited to share with you my recipe for Deliciously Spicy Chickpea Stuffed Bell Peppers. This dish is perfect for when you’re craving something hearty, flavorful, and healthy. The combination of spicy chickpeas and sweet bell peppers creates a harmony of flavors that will leave you satisfied and nourished.

To begin, you will need the following ingredients:

  • 4 large bell peppers
  • 1 can (400g) of canned chickpeas, drained and rinsed
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh parsley, for garnish

For this recipe, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • skillet
  • spatula
  • oven

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish.

Next, heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent. Add the chickpeas, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 5 minutes, stirring occasionally.

Fill the hollowed-out bell peppers with the chickpea mixture, pressing down gently to pack the filling.

Bake the stuffed bell peppers in the preheated oven for about 25-30 minutes, or until the peppers are tender.

Once cooked, remove the peppers from the oven and garnish with fresh parsley. Serve hot and enjoy the delicious combination of flavors!

The approximate total weight of the cooked dish is 1000g, with 4 servings. Each serving is approximately 250g, with an estimated calorie count of 300 per serving.

One unique tip for this dish is to sprinkle some nutritional yeast on top of the stuffed bell peppers before baking for a cheesy flavor boost!

I hope you give this recipe a try and enjoy every bite. Feel free to customize it with your favorite spices or additional vegetables. Happy cooking!
