Today’s Recipe: Spicy Chickpea Stuffed Bell Peppers

As the weather starts to cool down and fall is in full swing, I find myself craving warm, comforting meals that are bursting with flavor. That’s why today, I’m excited to share my recipe for Spicy Chickpea Stuffed Bell Peppers. This dish is not only delicious but also a great way to pack in some healthy nutrients.

Ingredients:

  • 2 medium yellow bell peppers
  • 1 can (400g) chickpeas, drained and rinsed
  • 1/2 cup (100g) quinoa
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 large tomato, diced
  • 1 jalapeno, seeded and diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • to taste

  • 2 tbsp olive oil

Kitchen Tools:

  • medium saucepan
  • baking dish

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish and set aside.

In a medium saucepan, cook the quinoa according to package instructions. In a separate pan, heat olive oil over medium heat. Add the onion, garlic, and jalapeno, cooking until softened. Stir in the chickpeas, tomato, cumin, smoked paprika, salt, and black pepper. Cook for another 5 minutes until everything is well combined.

Once the quinoa is cooked, add it to the chickpea mixture and stir until fully incorporated. Spoon the filling into the bell peppers, packing it down tightly. Place the peppers in the oven and bake for 25-30 minutes, until the peppers are tender.

Serve the Spicy Chickpea Stuffed Bell Peppers hot, garnished with fresh cilantro or a dollop of Greek yogurt for added creaminess.

One clever tip for this recipe is to sprinkle some nutritional yeast on top of the stuffed bell peppers before baking for an extra boost of cheesy flavor.
