  • 2 dried red chili peppers
  • 250ml heavy cream
  • 50g unsalted butter
  • 50g honey
  • pinch of sea salt
  • for dusting

I start by infusing the cream with the dried red chili peppers. In a saucepan, I gently heat the cream and add the whole chili peppers, allowing them to steep for about 10 minutes. The heat from the peppers will transfer to the cream, creating a subtle warmth that contrasts beautifully with the richness of the chocolate.

While the cream is infusing, I chop the dark chocolate into small pieces and place them in a heatproof bowl. Once the cream is ready, I strain out the chili peppers and pour the infused cream over the chocolate. I let it sit for a few minutes to allow the chocolate to melt before stirring everything together until smooth and glossy.

Next, I add in the butter, honey, and a pinch of sea salt, stirring until everything is well combined. The butter adds a silky richness, while the honey provides a hint of sweetness that balances out the bitterness of the dark chocolate and the heat from the chili peppers.

I divide the chocolate mixture into ramekins and refrigerate them for at least two hours to set. Before serving, I dust the tops with cocoa powder for a luxurious finish that hints at the complex flavors within.
