Ingredients:

  • chicken breast (boneless, skinless) – 400g
  • mango (ripe) – 1
  • jalapeno pepper – 1
  • coconut milk – 400ml
  • rice – 250g
  • ginger (fresh, grated) – 1 tbsp
  • garlic (minced) – 2 cloves
  • lime (juiced) – 1
  • cilantro (chopped) – for garnish

  • large skillet
  • wooden spoon
  • grater

To start, thinly slice the chicken breast and season with salt and pepper. In a large skillet over medium heat, cook the chicken until golden brown and cooked through. Remove from the skillet and set aside.
