Today, I’m excited to share my recipe for a Spicy Mango Chicken Curry. As the weather cools down, I crave warm and comforting dishes with a touch of spice. This flavorful curry combines the sweetness of ripe mangoes with the heat of aromatic spices, creating a dish that is truly unforgettable.

Ingredients:

  • 500g chicken breast
  • 2 ripe mangoes
  • 1 large onion
  • 3 garlic cloves
  • 2-inch piece of ginger
  • 2 red chili peppers
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Kitchen Tools:

  • wooden spoon
  • blender

To start, heat olive oil in a skillet over medium heat. Add diced onions and minced garlic, sautéing until fragrant. Add diced chicken breast and brown on all sides. Stir in curry powder, turmeric, ground coriander, and cumin, coating the chicken evenly.

Next, add diced mangoes, sliced red chili peppers, grated ginger, coconut milk, salt, and pepper. Bring the curry to a simmer and let it cook for 20-25 minutes, allowing the flavors to meld together.

Once the chicken is cooked through and the mangoes have softened, transfer the curry to a blender and blend until smooth. Return the curry to the skillet and simmer for an additional 5-10 minutes to thicken.

Serve the Spicy Mango Chicken Curry over steamed rice or with warm naan bread. The creamy texture of the coconut milk pairs perfectly with the sweetness of the mangoes and the heat of the spices. Enjoy this unique and flavorful dish on a chilly evening!
