Hey there, foodies! Today, I’m excited to share my recipe for Fiery Mango Chicken Skewers. This dish is perfect for a summer BBQ or a casual weeknight dinner with a kick. The combination of sweet mango and spicy flavors will tantalize your taste buds in the best way possible.

Ingredients:

  • 400g chicken breast, cubed
  • 1 ripe mango, peeled and diced
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • bamboo skewers, soaked in water

To start, combine the diced mango, chili powder, garlic powder, lime juice, salt, and black pepper in a mixing bowl. Toss in the cubed chicken breast and mix until the chicken is well-coated. Cover the bowl and let it marinate in the fridge for at least 30 minutes.

While the chicken is marinating, preheat your grill to medium-high heat. Thread the marinated chicken and mango pieces onto the soaked bamboo skewers, alternating between the two. Brush the skewers with olive oil before placing them on the grill.

Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is fully cooked and has a nice char. Remove the skewers from the grill and let them rest for a few minutes before serving.
