I’ve always loved the sweet and savory combination of mango chutney paired with juicy chicken. Today, I’m excited to share my unique twist on this classic dish by adding a kick of spice to the mix. Ingredients:

  • 500g chicken breast (cut into strips)
  • 1 large mango (peeled and diced)
  • 1 red onion (finely chopped)
  • 1 jalapeño (deseeded and minced)
  • 3 cloves garlic (minced)
  • 1-inch piece of ginger (grated)
  • 100ml apple cider vinegar
  • 50g brown sugar
  • 1 tbsp mustard seeds
  • 1 tsp cumin powder
  • Salt and pepper to taste

To start, heat a drizzle of oil in a saucepan over medium heat. Add the chopped red onion, jalapeño, garlic, and ginger. Sauté until the onions are translucent and the mixture is fragrant.

Next, add the diced mango, apple cider vinegar, brown sugar, mustard seeds, cumin powder, salt, and pepper to the saucepan. Stir well to combine all the flavors. Let the mixture simmer for about 20 minutes, stirring occasionally, until the mango breaks down and the chutney thickens.

In the meantime, season the chicken breast strips with salt and pepper. In a separate pan, cook the chicken until golden brown and fully cooked.

Once the mango chutney has reached the desired consistency, remove it from the heat and let it cool slightly. Then, using a hand blender, gently pulse the chutney to achieve a smoother texture.

To serve, place the cooked chicken strips on a plate and generously spoon the spicy mango chutney on top. The vibrant colors and aromatic flavors of this dish will surely impress your taste buds.
