  • fresh shrimp (300g, peeled and deveined)
  • canned coconut milk (400ml)
  • ripe mango (1, diced)
  • yellow onion (1, finely chopped)
  • garlic cloves (3, minced)
  • fresh ginger (1-inch piece, grated)
  • curry powder (2 tbsp)
  • chili flakes (1 tsp)
  • fish sauce (1 tbsp)
  • lime (1, juiced)
  • fresh cilantro (for garnish)
  • cooked rice (to serve)

To start, heat some oil in a large skillet over medium heat. Add the chopped onion and cook until softened, then add the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant. Next, add the curry powder and chili flakes, stirring constantly for about a minute.

Now, pour in the coconut milk, diced mango, and fish sauce. Bring the mixture to a simmer and let it cook for 5-7 minutes until the mango is soft and the flavors have melded together. Add the shrimp and cook for another 3-4 minutes until they turn pink and opaque.

Finish the dish by squeezing fresh lime juice over the curry. Serve the Spicy Mango Coconut Shrimp Curry over cooked rice and garnish with fresh cilantro. The combination of sweet mango, creamy coconut milk, and spicy flavors is truly a taste sensation!
