Ingredients:

  • 250g extra-firm tofu, cubed
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 small onion, diced
  • 100g green beans, trimmed
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp sriracha sauce
  • 1/2 cup vegetable broth
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • For serving: cooked rice

To begin, heat the wok over medium-high heat and add the sesame oil. Once hot, add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant. Next, add the diced onion and sliced red bell pepper, and cook for another 2-3 minutes until slightly softened.

Add the cubed tofu to the wok and cook until lightly browned on all sides, about 5-7 minutes. In a small bowl, mix together the soy sauce, sriracha sauce, vegetable broth, and cornstarch until smooth. Pour this sauce over the tofu and vegetables in the wok, stirring constantly until the sauce thickens.

Add the diced mango and trimmed green beans to the wok, stirring well to combine. Cook for another 2-3 minutes until the green beans are tender-crisp. Taste the stir-fry and adjust the seasoning if needed with more soy sauce or sriracha.
