For this recipe, you will need the following ingredients:

  • 500g chicken thighs
  • 150g creamy peanut butter
  • 400ml coconut milk
  • 2 tablespoons sriracha
  • 3 tablespoons soy sauce
  • 1 lime, juiced
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons oil
  • to taste

To prepare this dish, you will need the following kitchen tools:

  • wooden spoon
  • measuring cups and spoons
  • chopping board
  • knife

Start by heating oil in a large skillet over medium heat. Add minced garlic and grated ginger, and sauté until fragrant. Next, add chicken thighs to the skillet and brown on all sides.

In a separate bowl, mix together peanut butter, coconut milk, sriracha, soy sauce, lime juice, and brown sugar. Pour this mixture over the chicken in the skillet. Stir well to combine and bring to a simmer. Let it cook for about 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

Season with salt to taste and garnish with peanuts before serving. This Spicy Peanut Butter Chicken is best enjoyed over steamed rice or noodles.
