Ingredients:

  • 1 medium head of cauliflower, cut into florets (about 600g)
  • 1 cup fresh pineapple chunks (about 200g)
  • 1 large red bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons oil (for cooking)
  • Salt, to taste
  • Black pepper, to taste

In a small bowl, mix together soy sauce, sriracha sauce, sesame oil, rice vinegar, and brown sugar. In another bowl, dissolve cornstarch in water to create a slurry. Pour both mixtures into the wok with the vegetables. Add the fresh pineapple chunks and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats the vegetables.

Season with salt and black pepper to taste. Serve the spicy pineapple cauliflower stir-fry hot over steamed rice or noodles. Garnish with sesame seeds or chopped spring onions, if desired.
