Today’s Special: Spicy Pineapple Curry with Crispy Tofu

Hey there, foodies! Today, I’m sharing a recipe that’s perfect for those chilly autumn evenings when you’re craving something comforting and warm. This spicy pineapple curry with crispy tofu is a flavorful and satisfying dish that always puts a smile on my face. The combination of sweet pineapple, spicy curry, and crispy tofu is a real winner in my book.

Ingredients:

  • extra-firm tofu (350g), cubed
  • pineapple chunks (200g)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 can of coconut milk (400ml)
  • 2 tablespoons of curry powder
  • 1 teaspoon of chili flakes
  • 1 cup of vegetable broth
  • 2 tablespoons of coconut oil
  • cooked rice, for serving

I start by sautéing the diced onion, minced garlic, and grated ginger in coconut oil until fragrant. Then, I add the curry powder and chili flakes, toasting them for a minute to release their flavors. Next, I pour in the coconut milk and vegetable broth, stirring well to combine.

Once the sauce is simmering, I gently fold in the tofu cubes, making sure they are coated in the flavorful curry mixture. I let it simmer for about 15 minutes until the tofu is cooked through and the sauce has thickened slightly. Then, I add the pineapple chunks and cook for another 5 minutes to allow the flavors to meld together.

To serve, I dish up the spicy pineapple curry over a bed of fluffy rice, garnishing with fresh cilantro leaves for a pop of color and freshness. The contrast of the sweet pineapple, spicy curry, and crispy tofu is truly a delight for the taste buds.

The total weight of the cooked dish is approximately 800g, with 4 servings. Each serving weighs around 200g and has an estimated calorie count of 350 calories.
