Today’s Recipe: Spicy Pineapple Jerk Chicken

Hey there, foodies! Today, I’m excited to share with you a recipe that brings a tropical twist to a classic favorite. This Spicy Pineapple Jerk Chicken is perfect for adding some heat and sweetness to your weeknight dinner rotation.

Ingredients:

  • 800g chicken thighs (bone-in, skin-on)
  • 1 cup fresh pineapple, diced
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ground allspice
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • mixing bowl
  • baking sheet
  • skillet

Start by preheating your oven to 400°F (200°C). In a mixing bowl, combine the soy sauce, brown sugar, allspice, thyme, cayenne pepper, minced garlic, and olive oil. Season the chicken thighs with salt and pepper, then coat them evenly with the jerk marinade. Let them marinate for at least 30 minutes in the refrigerator.

While the chicken is marinating, spread the sliced pineapple, red bell pepper, jalapeno pepper, and onion on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast in the preheated oven for about 20 minutes or until the edges begin to caramelize.

Heat a skillet over medium-high heat. Sear the marinated chicken thighs skin-side down until golden brown, about 5 minutes. Flip the chicken and transfer the skillet to the oven. Roast for 25-30 minutes or until the chicken is cooked through.

Serve the Spicy Pineapple Jerk Chicken hot with the roasted pineapple and peppers on the side. The combination of spicy jerk seasoning and sweet pineapple will tantalize your taste buds!

This dish serves 4 and each serving weighs approximately 300g. One serving of Spicy Pineapple Jerk Chicken is around 380 calories.

One unusual tip for this recipe is to sprinkle some fresh cilantro over the finished dish for an added burst of freshness and flavor.

I hope you give this Spicy Pineapple Jerk Chicken a try soon. Feel free to customize the spice level to your liking or add different veggies to the mix. Enjoy!
