Today’s Special: Spicy Pineapple Salmon Tacos

Hey there, foodies! Today, I’m sharing a recipe that’s perfect for a casual weeknight dinner with a twist. These Spicy Pineapple Salmon Tacos are bursting with flavor and are sure to liven up your taste buds. I love the combination of spicy salmon with sweet pineapple — it’s a match made in culinary heaven. Let’s dive into the recipe!

Ingredients:

  • salmon fillets (400g)
  • canned pineapple slices (200g)
  • red chili (1 piece)
  • lime (1 piece)
  • taco shells (6 pieces)
  • red onion (1/2, thinly sliced)
  • fresh cilantro (handful, chopped)
  • olive oil (2 tbsp)
  • salt (to taste)
  • black pepper (to taste)

Kitchen Tools:

  • baking sheet
  • grill pan
  • chef’s knife
  • cutting board
  • tongs
  • mixing bowl

Start by preheating your grill pan over medium heat. In a mixing bowl, combine the olive oil, juice of half a lime, salt, and black pepper. Pat dry the salmon fillets and rub them with the olive oil mixture. Place the salmon on the grill pan and cook for about 4-5 minutes on each side, or until cooked through. Once cooked, set the salmon aside to rest.

While the salmon is cooking, drain the canned pineapple slices and place them on a baking sheet. Sprinkle them with chili flakes and broil in the oven for 5-7 minutes, until caramelized. Remove from the oven and chop the pineapple into small pieces.

In a separate bowl, combine the chopped red chili, remaining lime juice, red onion, and fresh cilantro to make a salsa. Season with salt and pepper.

To assemble the tacos, flake the cooked salmon into chunks. Fill each taco shell with the salmon, caramelized pineapple, and salsa mixture. Serve hot and enjoy the delicious flavors!

The total weight of the cooked dish is approximately 800g, with 6 servings. Each serving weighs around 133g, with an estimated calorie count of 250 per serving.

Pro tip: For an extra kick of heat, sprinkle some chili powder over the tacos before serving.

I hope you give these Spicy Pineapple Salmon Tacos a try and put your own unique spin on them. Happy cooking!
