Ingredients:

  • 1 small pumpkin (600g), peeled and diced
  • 1 can of chickpeas (400g), drained and rinsed
  • 1 can of coconut milk (400ml)
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp of curry powder
  • 1 tsp of chili flakes
  • A handful of fresh coriander, chopped
  • 500ml of vegetable broth
  • 2 tbsp of olive oil
  • Salt and pepper to taste

To start, heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until fragrant, about 2-3 minutes. Next, add the curry powder and chili flakes, stirring well to coat the onion mixture.

Now, add the diced pumpkin to the pot and cook for another 5 minutes until slightly softened. Pour in the vegetable broth, coconut milk, and drained chickpeas. Bring the stew to a gentle simmer and let it cook for about 20-25 minutes, stirring occasionally.

Once the pumpkin is tender, use a blender to puree half of the stew until smooth. This will give the stew a creamy texture while still having some chunky bits for a hearty feel. Season with salt and pepper to taste.

Before serving, stir in the freshly chopped coriander for a burst of freshness and color. Ladle the Spicy Pumpkin Chickpea Stew into bowls and garnish with a sprinkle of chili flakes, if desired. Enjoy this warm and comforting dish with a side of crusty bread or fluffy rice.
