Ingredients:

  • arborio rice (300g)
  • pumpkin, diced (250g)
  • spicy chorizo, sliced (150g)
  • onion, finely chopped (1)
  • garlic, minced (2 cloves)
  • chicken broth (1 liter)
  • white wine (150ml)
  • parmesan cheese, grated (50g)
  • butter (50g)
  • salt and pepper to taste

To start, heat a large saucepan over medium heat and add the sliced chorizo. Cook until the chorizo is crisp and has rendered its flavorful oils. Remove the chorizo from the pan and set it aside.

In the same pan, add the diced pumpkin and cook until it’s tender but still holds its shape. Remove the pumpkin and set it aside with the cooked chorizo.

Next, add the chopped onion and minced garlic to the pan and sauté until the onion is soft and translucent. Stir in the arborio rice and cook for a few minutes until the rice is coated with the oil from the pan.

Deglaze the pan with white wine and allow it to reduce slightly. Begin adding the chicken broth, one ladle at a time, stirring continuously until the rice has absorbed the liquid before adding more. Continue this process until the rice is creamy and cooked to al dente.

Once the risotto reaches the desired consistency, stir in the cooked pumpkin, chorizo, grated parmesan cheese, and butter. Season with salt and pepper to taste, and serve hot, garnished with additional parmesan cheese and a sprinkle of fresh parsley.
