Spicy Pumpkin Mac and Cheese Recipe

Today’s Special: Spicy Pumpkin Mac and Cheese

As the weather turns cooler and the leaves start to change, I find myself craving comfort food with a twist. That’s why I’m excited to share my recipe for Spicy Pumpkin Mac and Cheese! This dish is the perfect blend of creamy, savory, and just a little bit spicy, making it the ideal fall comfort food.

Ingredients:

  • elbow macaroni (250g)
  • pumpkin puree (200g)
  • cheddar cheese, shredded (150g)
  • jalapenos, diced (2)
  • milk (1 cup)
  • butter (50g)
  • flour (2 tbsp)
  • breadcrumbs (50g)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • pot
  • whisk
  • baking dish

To start, preheat your oven to 350°F (175°C) and cook the elbow macaroni according to package instructions until al dente. In a saucepan, melt the butter over medium heat and whisk in the flour to create a roux. Slowly whisk in the milk until the mixture thickens, then add the pumpkin puree, cheddar cheese, diced jalapenos, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.

Once the macaroni is cooked, drain it and add it to the cheese sauce, stirring until well coated. Pour the mac and cheese mixture into a greased baking dish. In a small bowl, mix the breadcrumbs with a little melted butter and sprinkle over the top of the mac and cheese.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the sauce is bubbly. Let it cool for a few minutes before serving to allow the flavors to meld together.

Tip:

For an extra kick of heat, try adding a sprinkle of cayenne pepper or hot sauce to the cheese sauce before baking!
