These pancakes are perfect for a cozy weekend breakfast or brunch, adding a touch of spice to your morning routine.

Ingredients:

  • 200g pumpkin puree
  • 150g flour
  • 250ml milk
  • 1 egg
  • 50g sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 tbsp butter

To start, mix the pumpkin puree, flour, milk, egg, sugar, baking powder, cinnamon, nutmeg, cayenne pepper, and salt in a large mixing bowl until just combined. Heat a skillet over medium heat and melt a tablespoon of butter. Pour about 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook for another minute or until golden brown.

Once all the pancakes are cooked, serve them warm with a pat of butter and a drizzle of maple syrup. The combination of sweet pumpkin, warm spices, and a hint of cayenne pepper creates a flavor profile that will leave your taste buds tingling.
