Today’s Recipe: Spicy Pumpkin Pasta

Hey there, foodies! Today, I am excited to share my latest creation: Spicy Pumpkin Pasta. This dish is perfect for those cozy autumn evenings when you’re craving something hearty and full of flavor. The combination of creamy pumpkin sauce with a kick of spice will surely warm you up from the inside out. Let’s get cooking!

Ingredients:

  • 300g pumpkin puree
  • 1 tsp chili flakes
  • 1/2 tsp ground cinnamon
  • 200ml canned coconut milk
  • 250g pasta of your choice
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • large pot
  • pan
  • wooden spoon
  • colander

Start by cooking your pasta according to the package instructions. In a pan, heat olive oil over medium heat and sauté the minced garlic until fragrant. Add in the pumpkin puree, chili flakes, and ground cinnamon, stirring well to combine. Pour in the coconut milk and let the sauce simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste.

Once the pasta is cooked, drain it in a colander and add it to the pumpkin sauce. Toss everything together until the pasta is well coated. If the sauce is too thick, you can add a splash of pasta water to loosen it up.

Serve the Spicy Pumpkin Pasta hot, garnished with a sprinkle of chili flakes for an extra kick. This dish serves four and each serving weighs approximately 300g. One serving of this delicious pasta is around 400 calories.

One tip for making this dish even more flavorful is to add a handful of toasted pumpkin seeds on top before serving. Not only do they add a nice crunch, but they also enhance the nutty flavor of the pumpkin sauce.
