As fall settles in and the weather starts to cool down, I find myself craving warm and comforting dishes that reflect the season. Today, I’m excited to share a unique recipe that combines the earthy sweetness of pumpkin with a spicy kick, all topped off with a luscious pear sauce. This dish is perfect for cozy nights in or special occasions when you want to impress your guests with something unexpected.

Ingredients:

  • 200g pumpkin puree
  • 150g ricotta cheese
  • 1/2 tsp cayenne pepper
  • 12 wonton wrappers
  • 1 ripe pear
  • 2 tbsp butter
  • 1 tbsp honey
  • to taste

To start, mix the pumpkin puree, ricotta cheese, cayenne pepper, and a pinch of salt in a mixing bowl. Lay out the wonton wrappers on a clean surface and place a small spoonful of the pumpkin mixture in the center of each wrapper. Fold the wrappers over and seal the edges with a bit of water to form the ravioli.

In a small saucepan, melt the butter over low heat. Add in the honey and diced pear, stirring gently until the pear is soft and caramelized. In a separate skillet, bring water to a gentle boil and cook the ravioli for 2-3 minutes or until they float to the surface.

Serve the hot ravioli drizzled with the pear sauce, and perhaps garnish with some fresh herbs for an extra pop of flavor. The combination of the spicy pumpkin filling and the sweet pear sauce creates a harmonious balance of flavors that will leave your taste buds dancing.

This recipe yields approximately 12 ravioli, with each serving weighing around 75g. One serving is estimated to be around 150 calories.
