Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 8 corn tortillas
  • 1 red bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro, for garnish
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • Salt, to taste
  • Pepper, to taste

To start, preheat your oven to 400°F (200°C). Place the diced sweet potatoes on a baking sheet and drizzle with olive oil, taco seasoning, salt, and pepper. Toss to coat evenly and roast in the oven for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy.

Meanwhile, heat a skillet over medium heat and add a splash of olive oil. Sauté the red bell pepper and red onion until softened, about 5-7 minutes. Add the black beans to the skillet and cook for an additional 2-3 minutes until heated through.

Warm the corn tortillas in a dry skillet or directly over a gas flame until they are soft and pliable. Assemble the tacos by layering the roasted sweet potatoes, black bean mixture, sliced avocado, and a squeeze of fresh lime juice. Garnish with cilantro and serve hot.

This recipe makes 8 tacos, with each serving weighing approximately 180 grams. Each serving is around 250 calories.

One clever tip for extra flavor is to sprinkle some crumbled feta cheese on top of the tacos before serving. The salty, creamy addition takes these tacos to the next level!
