Ingredients:

  • 200g ground chicken
  • 2 pineapple slices
  • 15g red curry paste
  • 30ml coconut milk
  • 10g fresh cilantro
  • 1 jalapeno, sliced
  • 2 burger buns

  • mixing bowl

To start, preheat your grill pan over medium-high heat. In a mixing bowl, combine the ground chicken, red curry paste, coconut milk, and chopped cilantro. Mix well to incorporate all the flavors. Form the mixture into two patties and place them on the grill pan. Cook for 5-6 minutes per side, or until the burgers are cooked through.

While the burgers are cooking, grill the pineapple slices on the same pan for about 2-3 minutes per side, until they have nice grill marks. Toast the burger buns on the grill pan as well until they are lightly browned.

To assemble the burgers, place a cooked patty on the bottom half of each bun. Top with a grilled pineapple slice, some sliced jalapenos for a bit of heat, and the top half of the bun.
