Ingredients:

  • boneless chicken breast (250g)
  • pineapple chunks (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • fish sauce (1 tbsp)
  • brown sugar (1 tbsp)
  • fresh basil leaves (a handful)
  • red chili (1, sliced)

  • wooden spoon

Preparation:

Start by cutting the chicken breast into bite-sized pieces. In a large skillet over medium heat, cook the chicken until it is no longer pink. Add the red curry paste and stir until fragrant. Next, pour in the coconut milk and bring the mixture to a gentle simmer.

Once the curry starts to thicken, add the pineapple chunks, fish sauce, brown sugar, and sliced red chili. Let the flavors meld together for a few minutes before adding the fresh basil leaves. Stir everything well to combine and allow the curry to simmer for another 5-7 minutes.

Taste and adjust the seasoning if needed. If you prefer a spicier curry, you can add more red curry paste or chili. For a sweeter note, sprinkle in a bit more brown sugar. Serve the Spicy Thai Pineapple Curry hot over steamed jasmine rice.
