Today, I’m excited to share a unique and delicious dish that I created to celebrate the arrival of spring. This recipe combines fresh, seasonal ingredients with a twist, making it a perfect way to welcome the warmer weather in a flavorful and unexpected way.

For this dish, you will need the following ingredients:
– 500g boneless chicken thighs
– 1 tbsp olive oil
– 1 red bell pepper, diced
– 1 yellow onion, sliced
– 2 cloves of garlic, minced
– 1/2 cup coconut milk
– 1 tbsp curry powder
– Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • Chef’s knife
  • Cutting board
  • Large skillet
  • Wooden spoon

Start by heating the olive oil in a large skillet over medium heat. Add the diced red bell pepper and sliced yellow onion, and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Next, add the boneless chicken thighs to the skillet and season with curry powder, salt, and pepper. Cook until the chicken is browned on all sides, about 8-10 minutes.

Once the chicken is cooked through, pour in the coconut milk and stir to combine. Reduce the heat to low and let the mixture simmer for another 5-10 minutes, allowing the flavors to meld together.
