I’m excited to share a unique recipe I created today that combines the buttery richness of pistachios with the succulent taste of salmon, all topped off with a refreshing lemon dill sauce. This dish is perfect for a special occasion or simply to treat yourself to something out of the ordinary.

Ingredients:

  • 2 salmon fillets (200g each)
  • 100g pistachios, shelled
  • 1/4 cup fresh dill, chopped
  • 1 lemon, juiced and zested
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. In a food processor, pulse the pistachios until finely chopped, then transfer them to a shallow dish. Season the salmon fillets with salt and pepper, then press them into the crushed pistachios to coat each side evenly.

Place the pistachio-crusted salmon fillets on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the pistachio crust is golden brown and crispy.

While the salmon is baking, prepare the lemon dill sauce. In a skillet, melt the butter over medium heat. Add the lemon juice and zest, fresh dill, and olive oil, stirring to combine. Season the sauce with salt and pepper to taste, then remove from heat.

Serve the pistachio-crusted salmon hot, drizzled with the lemon dill sauce. The combination of the nutty pistachios, tender salmon, and zesty sauce creates a harmonious blend of flavors that will impress your taste buds.
