Refreshing Watermelon Gazpacho: A Taste of Summer

As the temperatures rise and the sun shines brightly, I find myself yearning for light and refreshing dishes to cool me down. Today, I am excited to share with you my unique recipe for Watermelon Gazpacho, a delightful twist on the classic Spanish cold soup.

For this recipe, you will need the following ingredients:

  • 1 small watermelon, diced (about 600g)
  • 1 cucumber, peeled and chopped (about 200g)
  • 1/2 red onion, diced (about 50g)
  • 1 red bell pepper, seeds removed and chopped (about 150g)
  • 2 tomatoes, diced (about 300g)
  • 1 clove of garlic, minced
  • Juice of 1 lime
  • Handful of fresh cilantro, chopped
  • 2 tbsp of olive oil
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • blender
  • knife
  • cutting board
  • bowl

Start by combining the diced watermelon, cucumber, red onion, red bell pepper, tomatoes, and minced garlic in a large bowl. Toss everything together gently to mix the ingredients.

Next, transfer the mixture to a blender and blend until smooth. You may need to do this in batches, depending on the size of your blender.

Once the mixture is smooth, pour it back into the bowl and stir in the lime juice, olive oil, chopped cilantro, salt, and pepper. Adjust the seasoning to taste, adding more salt or pepper if needed.

Chill the gazpacho in the refrigerator for at least an hour before serving to allow the flavors to meld together.

This Watermelon Gazpacho weighs approximately 1500g once prepared and serves 4 people. Each serving is around 375g, and one serving contains approximately 120 calories.

One unique tip for this recipe is to garnish the gazpacho with small watermelon or cucumber cubes for an extra burst of freshness and texture.
