Welcome, foodies! Today, I’m excited to share a dish that perfectly captures the essence of summer with a spicy twist. This Spicy Mango Basil Chicken is a delightful combination of sweet and heat, creating a flavor explosion that will leave your taste buds craving more.

Ingredients:

  • 350g chicken breast (cut into cubes)
  • 1 ripe mango (diced)
  • Handful of fresh basil leaves
  • 1 tsp red chili flakes
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 cloves of garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Start by seasoning the chicken cubes with salt and pepper. In a skillet over medium-high heat, heat olive oil and add the seasoned chicken. Cook until browned on all sides, then remove from the skillet and set aside.

In the same skillet, add minced garlic and red chili flakes. Sauté until fragrant, then add in diced mango and soy sauce. Cook for a few minutes until the mango softens slightly.

Return the chicken to the skillet and drizzle honey over the mixture. Stir well to coat the chicken in the sweet and spicy sauce. Allow it to simmer for a few more minutes until the sauce thickens slightly.

Just before serving, tear the fresh basil leaves and sprinkle them over the dish for a burst of herbal aroma and flavor. Serve the Spicy Mango Basil Chicken hot over steamed rice or with a side of crunchy stir-fried vegetables.

This dish weighs approximately 900g once cooked and serves 4. Each serving is around 225g with an estimated calorie count of 300 per portion.
