Refreshing Watermelon Gazpacho

Today, I’m excited to share a light and refreshing summer recipe that will cool you down on those hot days. This watermelon gazpacho is a twist on the classic Spanish soup, using sweet and juicy watermelon as the star ingredient.

Ingredients:

  • 1 small seedless watermelon, diced
  • 1 English cucumber, peeled and chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh mint leaves
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • measuring cup

To start, combine the diced watermelon, chopped cucumber, red onion, mint leaves, lime juice, and olive oil in a blender. Blend until smooth, then season with salt and pepper to taste.

Chill the gazpacho in the refrigerator for at least 1 hour to let the flavors meld together. When ready to serve, ladle the soup into bowls and garnish with additional mint leaves for a pop of freshness.

This watermelon gazpacho is a perfect summer dish to enjoy on a hot day. The total weight of the cooked dish is approximately 1200 grams, with 4 servings in total. Each serving weighs around 300 grams, with an estimated calorie count of 150 per serving.
