Today, I’m excited to share with you my latest culinary creation – a refreshing Mango Avocado Gazpacho that is bursting with vibrant flavors and textures. This chilled soup is the perfect way to beat the heat and indulge in the abundance of summer produce.

Ingredients:

  • 1 large ripe mango (peeled and diced)
  • 1 ripe avocado (peeled and diced)
  • 1/2 cucumber (peeled and diced)
  • 1 red bell pepper (seeded and diced)
  • 1/4 red onion (finely diced)
  • 1 garlic clove (minced)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

To start, combine the diced mango, avocado, cucumber, red bell pepper, red onion, minced garlic, and chopped cilantro in a mixing bowl. Drizzle with olive oil, squeeze the lime juice over the top, and sprinkle with cumin, salt, and pepper. Gently toss the ingredients together until well combined.

Transfer the mixture to a blender and blend until smooth and creamy. If the gazpacho is too thick, you can add a splash of water to reach your desired consistency. Taste and adjust the seasoning as needed.

Once the gazpacho is smooth, transfer it to a large bowl and refrigerate for at least 1 hour to allow the flavors to meld together. When ready to serve, divide the chilled soup into bowls and garnish with additional chopped cilantro and a drizzle of olive oil.
