Refreshing Watermelon Gazpacho

Ingredients:

  • 1 kg watermelon, chopped
  • 500g ripe tomatoes, diced
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, seeded and chopped
  • 2 cloves garlic, minced
  • Handful of fresh basil leaves
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • Salt and pepper to taste

Start by combining the watermelon, tomatoes, cucumber, red onion, red bell pepper, garlic, and basil in a large bowl. Add the red wine vinegar, olive oil, salt, and pepper. Mix everything well to combine the flavors.

Next, in batches, transfer the mixture to a blender and blend until smooth. If you prefer a chunkier soup, you can blend it to your desired consistency.

Once the gazpacho is smooth, taste and adjust the seasoning if needed. Refrigerate for at least 2 hours to chill and allow the flavors to meld together.

Serve the watermelon gazpacho cold, garnished with fresh basil leaves or a drizzle of olive oil. This soup is perfect for a light lunch or as a refreshing starter for a summer dinner party.
