Refreshing Cucumber and Watermelon Gazpacho

Today, I’m excited to share a unique and refreshing summer dish that combines the crispness of cucumbers with the sweetness of watermelon in a gazpacho like you’ve never tasted before. This dish is perfect for hot summer days when you’re craving something light, healthy, and full of flavor.

Ingredients:

  • 3 medium cucumbers, peeled and chopped
  • 4 cups of diced watermelon
  • 1/2 small red onion, diced
  • 1 red bell pepper, seeded and chopped
  • 1 large tomato, chopped
  • 2 cloves of garlic, minced
  • Juice of 2 limes
  • Handful of fresh mint leaves
  • 1/4 cup of olive oil
  • 2 tablespoons of white wine vinegar
  • Salt and pepper to taste

To start, combine the chopped cucumbers, watermelon, red onion, bell pepper, tomato, garlic, and fresh mint leaves in a blender. Blend until smooth and creamy.

Next, add the lime juice, olive oil, white wine vinegar, salt, and pepper to the blender. Blend again until everything is well combined and smooth.

Taste the gazpacho and adjust the seasoning if necessary. If it’s too thick, you can add a bit of water to reach your desired consistency.

Refrigerate the gazpacho for at least an hour to allow the flavors to meld together and chill. Serve cold, garnished with additional mint leaves, if desired.
