For this recipe, you will need the following ingredients:

  • 10 fresh basil leaves
  • 250g cream cheese
  • 150g sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 50g butter
  • 200g digestive biscuits

To prepare this delightful dessert, you will need the following kitchen tools:

  • mixing bowl
  • springform pan
  • saucepan

Start by preheating your oven to 350°F (180°C) and lining the base of your springform pan with parchment paper. In a food processor, blitz the digestive biscuits until they resemble fine crumbs. Melt the butter in a saucepan and mix it with the biscuit crumbs. Press this mixture into the base of the pan to create the cheesecake crust.

In a mixing bowl, beat together the cream cheese and sugar until smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour this creamy mixture over the biscuit base in the pan.

Slice the apricots into thin wedges and arrange them on top of the cheesecake mixture. Tear the basil leaves and scatter them over the apricots. Bake the cheesecake in the preheated oven for 40-45 minutes, or until the center is set.
