Ingredients:

  • 1 small watermelon (about 1.5 kg), cubed
  • 1 large cucumber, peeled and chopped
  • 1/2 red onion, diced
  • 1 yellow bell pepper, seeded and diced
  • 1 serrano chili, seeded and chopped
  • 1/4 cup fresh basil leaves
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Start by blending the watermelon in a blender until smooth. In a large bowl, combine the blended watermelon, cucumber, red onion, yellow bell pepper, serrano chili, and fresh basil. Mix well to combine all the flavors.

Next, drizzle in the lime juice and olive oil. Season with salt and pepper to taste. Stir everything together until well incorporated. Chill the gazpacho in the refrigerator for at least 1 hour to allow the flavors to meld together.

When ready to serve, give the gazpacho a quick stir and ladle it into bowls. Garnish with additional basil leaves or a dollop of Greek yogurt for extra creaminess.

The total weight of the cooked dish is approximately 2 kg, with enough for 6 servings. Each serving is approximately 333 grams, and with the light and fresh ingredients, each serving is estimated to be around 150 calories.
