This dish was inspired by a recent trip to a local farmer’s market where I picked up some fresh, vibrant carrots. I wanted to create a recipe that combined sweet and savory flavors with a touch of earthiness, and these roasted carrots hit the spot perfectly.

Ingredients:

  • 500g rainbow carrots
  • 50ml honey
  • 30ml olive oil
  • 3 sprigs of fresh rosemary
  • 1 tsp sea salt
  • 1/2 tsp black pepper

  • knife
  • cutting board

To start, preheat your oven to 200°C. Wash and peel the carrots, then cut them into uniform sticks. In a mixing bowl, combine the honey, olive oil, chopped rosemary leaves, sea salt, and black pepper. Add the carrot sticks to the bowl and toss them until they are well coated with the mixture.

Spread the carrots out on a baking sheet in a single layer. Roast them in the preheated oven for about 25-30 minutes, or until they are caramelized and tender, stirring halfway through the cooking time.
