To create this unique dish, you’ll need the following ingredients:

  • 200g cherry tomatoes
  • 2 peaches
  • 1/2 red onion
  • 100g feta cheese
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1 tbsp honey
  • Handful of fresh basil leaves
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • sharp knife
  • whisk

Begin by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. Slice the cherry tomatoes in half and place them on the baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 20-25 minutes, or until the tomatoes are caramelized.

While the tomatoes are roasting, slice the peaches and red onion into thin wedges. In a mixing bowl, whisk together the balsamic vinegar, honey, and remaining olive oil to create a dressing.
