For this recipe, you will need the following ingredients (approximately):

  • 200g Arborio rice
  • 1 liter chicken broth
  • 1 large onion, diced
  • 150g fresh blueberries
  • 100g grated Parmesan cheese
  • 2 tbsp balsamic vinegar
  • 50g butter
  • 1 tbsp fresh thyme leaves

To start, heat the chicken broth in a saucepan over medium heat until simmering. In another saucepan, melt half of the butter and sauté the diced onion until translucent. Add the Arborio rice to the onion mixture and toast it for a few minutes until it becomes fragrant.

Begin adding the hot chicken broth to the rice one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is cooked to al dente, about 18-20 minutes.

Meanwhile, in a separate pan, melt the remaining butter and add the fresh blueberries. Cook them down until they burst and release their juices. Mash them slightly to create a sauce-like consistency. Stir in the balsamic vinegar and season with salt and pepper.

Once the risotto is cooked, stir in the grated Parmesan cheese, fresh thyme leaves, and the blueberry balsamic mixture. Adjust the seasoning to taste and serve the Savory Blueberry Risotto hot, garnished with extra thyme leaves and Parmesan cheese.
