As the weather starts to cool down, I find myself craving warm and comforting dishes with a kick. Today, I’m excited to share with you my unique recipe for Spicy Mango Curry Noodles. This dish combines the sweetness of ripe mangoes with the heat of curry spices for a deliciously satisfying meal that will warm you up from the inside out.

Ingredients:

  • rice noodles (200g)
  • ripe mango (1, peeled and diced)
  • coconut milk (400ml)
  • curry powder (2 tbsp)
  • red chili flakes (1 tsp)
  • garlic (2 cloves, minced)
  • onion (1, chopped)
  • bell pepper (1, sliced)
  • vegetable broth (500ml)
  • fresh cilantro (for garnish)

  • chef’s knife
  • cutting board
  • measuring spoons

To start, cook the rice noodles according to the package instructions and set aside. In a large pot, heat some oil over medium heat and sauté the garlic, onion, and bell pepper until they are soft and fragrant. Add the curry powder and red chili flakes, and toast them for a minute to release their flavors. Pour in the coconut milk and vegetable broth, and bring the mixture to a simmer.

Once the broth is simmering, add the diced mango to the pot and let everything cook together for about 10 minutes to allow the flavors to meld. Taste the broth and adjust the seasoning as needed with salt and pepper. Finally, add the cooked rice noodles to the pot and toss everything together until the noodles are well coated in the curry-mango sauce.

Divide the Spicy Mango Curry Noodles into bowls and garnish with fresh cilantro. Serve hot and enjoy the unique blend of sweet and spicy flavors in every bite.
