Today’s Special: Mango Curry Chicken

Today, I’m excited to share a unique and flavorful recipe that combines the sweetness of mango with the spiciness of curry in a delicious chicken dish. This dish is perfect for a cozy night in or a special dinner with loved ones.

Ingredients:

  • 400g chicken breast
  • 1 ripe mango
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 onion, chopped
  • 1 red bell pepper, sliced
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Kitchen Tools:

  • wooden spoon

To start, heat some oil in a skillet over medium heat. Add the chopped onion, garlic, and ginger, and sauté until fragrant. Then, add the chicken breast cut into bite-sized pieces and cook until browned.

Next, add the curry powder and stir until the chicken is coated evenly. Pour in the coconut milk and bring the mixture to a simmer. Let it cook for about 10 minutes until the chicken is cooked through.

While the chicken is simmering, peel and dice the ripe mango. Add the mango chunks and sliced bell pepper to the skillet. Let everything cook together for another 5 minutes to allow the flavors to blend.

Finally, season with salt and pepper to taste. Serve the mango curry chicken over steamed rice and garnish with fresh cilantro for a pop of color and freshness.

Clever Tip:
