Refreshing Watermelon and Feta Salad

Today, I’m excited to share a light and refreshing summer dish that never fails to impress – my Watermelon and Feta Salad. This salad is perfect for a hot summer day, bringing together the sweetness of ripe watermelon with the tanginess of feta cheese for a delightful flavor combination.

Ingredients:

  • 1/2 medium watermelon, cubed
  • 200g feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup black olives, pitted
  • 2 tbsp lime juice
  • 3 tbsp olive oil
  • Salt and pepper to taste

Start by cubing the watermelon and placing it in a large mixing bowl. Add the crumbled feta cheese, chopped fresh mint leaves, thinly sliced red onion, and pitted black olives to the bowl.

In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined. Pour this dressing over the watermelon mixture and gently toss everything together until evenly coated.

Transfer the salad to a serving platter and garnish with a few extra mint leaves for a pop of color. You can also sprinkle some extra crumbled feta on top for added flavor.
