I’m excited to share this unique and creative recipe today, inspired by the changing seasons and my love for experimenting with unexpected flavor combinations. This Sweet Potato & Blackberry Galette is a perfect mix of savory and sweet, making it a delightful addition to any meal or a stand-alone treat.

Ingredients:

  • 2 medium sweet potatoes, thinly sliced
  • 1 cup fresh blackberries
  • 2 tbsp honey
  • 100g goat cheese
  • 1/2 cup chopped pecans
  • 2 tbsp fresh thyme leaves
  • 200g all-purpose flour
  • 150g cold unsalted butter, cubed
  • 6-8 tbsp ice water
  • 1 tsp salt

Preparation:

Start by preheating your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a mixing bowl, combine the flour and salt. Add the cold butter cubes and use your hands to break the butter into the flour until it resembles coarse crumbs. Slowly add in the ice water, a tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Once the dough has chilled, roll it out on a floured surface into a circle about 12 inches in diameter. Transfer the rolled-out dough to the prepared baking sheet. Arrange the sweet potato slices on top of the dough, leaving a border around the edge. Crumble the goat cheese over the sweet potatoes, then sprinkle the blackberries, pecans, and thyme on top. Drizzle the honey over the filling.

Fold the edges of the dough over the filling, creating a rustic galette shape. Brush the edges of the dough with some beaten egg for a golden finish. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the sweet potatoes are tender.

Serve the galette warm, either as a unique side dish or a standalone meal.

Tips:

For an extra pop of flavor, try adding a sprinkle of sea salt on top of the galette just before serving. The salt will help enhance the sweetness of the blackberries and honey.
