Grilled Peach and Prosciutto Salad

Today, I’m excited to share with you a delicious and refreshing summer recipe that combines the sweetness of grilled peaches with the saltiness of prosciutto in a colorful and vibrant salad. This dish is perfect for a light lunch or as a side for your next barbecue. Let’s get started!

Ingredients:

  • 2 ripe peaches (300g)
  • 4 slices of prosciutto (50g)
  • 2 cups of arugula (50g)
  • 50g of crumbled goat cheese
  • 2 tbsp of balsamic glaze
  • 1 tbsp of olive oil
  • Pinch of salt
  • Pinch of pepper

Kitchen Tools:

  • mixing bowl

Start by preheating your grill pan over medium heat. Cut the peaches in half and remove the pit. Place the peach halves on the grill pan, cut side down, and grill for about 3-4 minutes until grill marks appear.

While the peaches are grilling, tear the prosciutto into small pieces and set aside. In a mixing bowl, combine the arugula, crumbled goat cheese, olive oil, balsamic glaze, salt, and pepper. Toss everything together until well combined.

Once the peaches are done grilling, remove them from the heat and allow them to cool slightly. Cut the grilled peaches into slices and add them to the arugula mixture. Gently toss everything together to incorporate the peaches.

Divide the salad onto plates and top each one with the torn prosciutto pieces. Drizzle a bit more balsamic glaze on top for an extra burst of flavor. Serve immediately and enjoy!
