Sweet & Savory Chicken and Sweet Potato Bake

Today, I’m sharing a unique and delicious recipe that combines sweet and savory flavors in a surprising way. This dish is perfect for a cozy night in or a special gathering with friends. Let’s get started on making this unforgettable meal!

Ingredients:

  • chicken thighs (500g)
  • sweet potatoes (500g)
  • dried apricots (200g)
  • onion
  • garlic cloves
  • cumin
  • cinnamon
  • chicken broth (500ml)
  • salt and pepper
  • olive oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • oven
  • large skillet
  • wooden spoon

To begin, preheat the oven to 375°F (190°C). Peel and chop the sweet potatoes into bite-sized chunks, then dice the onion and mince the garlic. Set these aside for later.

In a large skillet over medium heat, add a drizzle of olive oil and sear the chicken thighs until they are golden brown on each side. Remove the chicken from the skillet and set it aside.

In the same skillet, add a bit more olive oil if needed, then sauté the onion and garlic until they are fragrant. Add the cumin and cinnamon, and stir for a minute to release their flavors. Return the chicken to the skillet.

Add the sweet potatoes, dried apricots, and chicken broth to the skillet. Season everything with salt and pepper. Bring the mixture to a simmer, then cover the skillet and transfer it to the preheated oven.

Cook for about 30-40 minutes, or until the chicken is cooked through and the sweet potatoes are tender. Remove from the oven and let it rest for a few minutes before serving.

Tip:

For an extra burst of flavor, try adding a squeeze of fresh lemon juice over the dish before serving. The acidity will brighten up the flavors and bring everything together beautifully.
