As the weather starts to cool down, I find myself craving hearty and comforting dishes. Today, I’m excited to share with you a unique recipe that combines the sweetness of raspberries with the earthy aroma of rosemary for a delightful twist on traditional pork chops. This dish is perfect for a cozy dinner at home during the fall season.

Ingredients:

  • 4 boneless pork chops (approximately 600g)
  • 1 cup fresh raspberries
  • 2 sprigs of fresh rosemary
  • 2 tablespoons honey
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

To start, preheat your cast iron skillet over medium-high heat. Season the pork chops with salt and pepper on both sides. Once the skillet is hot, sear the pork chops for about 3-4 minutes on each side until they develop a golden crust. Using a meat thermometer, ensure they reach an internal temperature of 145°F. Remove the pork chops from the skillet and let them rest while you prepare the raspberry rosemary glaze.

In a saucepan, combine the raspberries, honey, balsamic vinegar, and fresh rosemary sprigs. Cook the mixture over low heat, stirring occasionally, until the raspberries break down and the sauce thickens, about 10 minutes. Remove the rosemary sprigs and transfer the glaze to a mixing bowl.

Using the same skillet, heat olive oil over medium heat. Return the pork chops to the skillet and spoon the raspberry rosemary glaze over each chop. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Once the pork chops are cooked through and the glaze is caramelized, remove them from the skillet and let them rest for a few minutes before serving. I like to garnish with fresh raspberries and a sprinkle of chopped rosemary for an extra burst of flavor.
