Refreshing Watermelon Gazpacho

Summer is in full swing, and there’s nothing I love more on a hot day than a refreshing bowl of gazpacho. Today, I wanted to share my unique twist on this classic chilled soup by incorporating the sweet juiciness of watermelon.

Ingredients:

  • 1 kg watermelon, cubed
  • 300 g cucumber, peeled and diced
  • 200 g red bell pepper, diced
  • 400 g tomato, seeded and chopped
  • 100 g red onion, finely chopped
  • 2 cloves garlic, minced
  • 60 ml lime juice
  • 60 ml olive oil
  • 30 ml white wine vinegar
  • 30 g fresh basil, chopped
  • Salt and pepper to taste

To start, combine the watermelon, cucumber, red bell pepper, tomato, red onion, and garlic in a blender. Blend until smooth. Add in the lime juice, olive oil, white wine vinegar, and fresh basil. Season with salt and pepper to taste, and blend again until well combined.

Transfer the gazpacho to a large bowl and refrigerate for at least 1 hour to allow the flavors to meld together. Serve cold, garnished with additional basil if desired.

This unique Watermelon Gazpacho weighs approximately 1900 grams in total and serves 4. Each serving is around 475 grams, with an estimated calorie count of 150.

One clever tip for this recipe is to garnish the gazpacho with a drizzle of balsamic glaze for an extra burst of flavor.
