Ingredients:

  • 1 ripe mango, peeled and cubed
  • 250g shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 2 tbsp vegetable oil
  • Fresh cilantro leaves for garnish
  • Cooked rice for serving

To start, heat vegetable oil in a wok over medium-high heat. Add minced garlic and ginger, and sauté until fragrant. Toss in the sliced onion and red bell pepper, stir-frying until they begin to soften.

Next, add the shrimp to the wok and cook until they turn pink and opaque. Stir in the cubed mango, soy sauce, and sriracha, allowing the flavors to meld together for a few minutes.

Once everything is heated through and well combined, remove the wok from the heat. Serve the spicy mango shrimp stir-fry over cooked rice and garnish with fresh cilantro leaves.

The total weight of the cooked dish is approximately 800g, with 4 servings at around 200g each. One serving of this dish contains about 350 calories.

A unique tip for this recipe is to add a splash of coconut milk for a creamy twist to the sauce. It adds a subtle sweetness that complements the spicy flavors perfectly.
